Mexican Chocolate Chia Pudding

One recipe takes care of two essentials: breakfast and omega-3s.

Simply measure, blend, and chill; and the next morning you can enjoy a dish decadent enough for dessert but with all of the healthy components on which to build a successful - and beautiful - day.

Chia Seeds

omega-3 fatty acids help our cell walls become more flexible so essential nutrients can get in, allowing our skin to retain moisture, diminishing the appearance of wrinkles, and preventing inflammation and redness

Raw Cacao Powder

raw cacao has more antioxidants than processed cocoa powder, is rich in magnesium, and is a great alternative to coffee for morning energy


packed with minerals, dates contain tryptophan, a precursor for the body’s production of serotonin, yielding a calming rather than hyper effect commonly associated with sweets


used to regulate blood sugar and stimulate circulation and digestion


used for boosting metabolism

Mexican Chocolate Chia Pudding

Serves 2

3 tablespoons chia seeds*
3/4 cup whole milk or non-dairy milk
2 tablespoons raw cacao powder
3 pitted dates or 2 tablespoons maple syrup
½ teaspoon ground cinnamon
½ teaspoon vanilla extract
pinch cayenne pepper
pinch teaspoon sea salt

In a blender, combine the chia seeds, milk, cacao powder, dates or maple syrup, cinnamon, cayenne, vanilla, and sea salt. Blend until the dates are well incorporated.

Divide the mixture evenly between two bowls, cover, and transfer to the refrigerator. Chill overnight, and enjoy first thing in the morning garnished with fresh or dried fruit.

*If you don’t enjoy the texture of whole chia seeds, grind them in a spice grinder before combining with the remaining ingredients for a silkier pudding.
